In addition to raising its price slightly, Corton has somewhat changed the format of its menu. Now termed a "seasonal tasting menu," it seems to offer 5 courses, including a choice of Wagyu beef or guinea hen:
Question is: we don't eat meat or poultry, but eat fish. With advance notification, do you think Corton will substitute a fish preparation for the third course?
