Is it me or have we been on a 20 year backlash of overcooked vegtables? I'm really tired of undercooked green beans,carrots,cauliflower,and broccoli. I think vegtables should be cooked to the POINT of being soft. They shouldn't be mushy but the certainly shouldn't be crunchy.
I just had dinner at Oporto in Hartsdale. Had the pork chops with roasted potatoes and green beans. The pork and potatoes were delish, but the beans weren't cooked. It's not just at Oporto, but at many restaurants in Westchester.
The chef came out to greet my husband. Found out my husband has lunch there way more often than he tells me. He also didn't mention how absolutlely gorgeous and sweet the chef is!
I was a real pain anyway and told everyone how to cook green beans. Julia Child lives!
