we had an amazing cheese at providence this weekend - it was described as being made from water buffalo who are only fed bitter greens like radicchio and arugula - and it tasted exactly like bitter greens! heaven on their walnut bread and with a dab of apple compote. it was pure white, oozing and soft like an epoisse, spooned out of the rind which was swathed in linen cloth. i have scoured the internet to no avail. of course i could call the restaurant, but the hunt is much more fun.
