A friend and his mother are coming over for dinner tonight. I'm on holiday this week, so I can spend some time cooking. However, I'm pretty skint at the moment, and would like to avoid doing much shopping. I'm also feeling quite lazy about how far to travel for ingredients. 3 of us eat fish, but not meat, but I'm not sure about his mum, but I'm pretty sure she is less vegetarian than us.
Olives (will buy from nice Turkish supermarket up the block)
Salmon cakes (made from canned wild alaskan salmon, with capers, fresh dill, and green onions) served with some greens from CSA box with lemon juice and olive oil as light dressing.
Barley risotto with fresh CSA fava beans, green peas, and maybe some thinly sliced spinach tossed in at the end. Parsley and mint? I made some earlier this week and was happy with how it turned out.
Yeasted sugar cake served with CSA (ripe but bruised) roasted peaches and maybe a dollop of yogurt. Maybe make the variation of the cake with ground almonds?
The weather is pretty fickle here in London, so I don't mind turning on the oven.
