I saw a posting for a food organization called the Confrerie de la Chaine Rotisseurs (Brotherhood of the Roasting Chain)that did a special dinner at Pao Lim a few years ago? My impression is that they are a part professional chef, part gourmet group. Anyone know anything more about them? One of my friends is planning to start culinary school in a year or so. I figure it could be a good opportunity for him to network for his career and for us to have an excuse to eat some good food. The whole thing reminded me of one of the societies that Peter Mayle described in his books that frog legs or tasted wine as part of a town festival.
