I purchased a package of veal labeled "Veal Cubes" from a local farm. It doesn't say what cut they are from. So my question is without knowing what they are, how long should I cook them. I am wondering if they will be OK in a quick stew cooking for 30-45 minutes, or will they need a couple hours to be tender? Any suggestions? Recipe ideas? I was thinking of doing them german style in a cream based sauce over spaetzle.....???
