Our Saturday Growers Market has a *Mushroom Man" and I bought some black trumpet mushrooms from him this morning. When I have a really special ingredient, I especially want to cook something where that is the main taste. So I'm considering a risotto. If risotto, does anyone have a particular technique or recipe or suggestions. Would you use a vegetable broth rather than chicken (I don't have homemade of either right now)? Or a pasta? Again, any ideas? How big or small would you make the pieces? And I'm thinking pieces (torn) not slices. I could just saute in butter and eat as a side dish as I did with the morels I bought from him last week but would like some other ideas. I don't have a scale here but I'm guessing torn up I'd have between 3 and 4 cups. Thanks alot.
