Last night I came up with a new flavor combination that I think I have fallen in love with. I bought some fresh beets last week and promptly roasted them when I brought them home. I stuck them in a zip bag and stuck them in the fridge. I was making dinner last night and was making maques choux and considered making Madhur Jaffery's beets with yogurt and decided 2 creamy dishes would be too much. I ended up peeling and slicing the cold beets and dressing them with balsamic vinegar a bit of Boyajian orange oil and a chiffonade of fresh mint s&p to taste. Wow was that good served cold as a salad or pickled veg. No exact measurement, maybe 1/4 C. balsamic to about 1/4 tsp.orange oil, I guess orange zest would work too but the oil is what I had. The mint variety I have growing is a chocolate mint. The beets were 3 mid-sized red beets and i had just put them in a covered casserole and roasted at 350 F. for about an hour.
