Since I was reading about how the cheese board needed a little love I thought I would post about a cheese Inhave bought several times when I have had the opportunity. In Williamsburg and Lancaster I have run across cheese shops that sell Beemster Dutch cheese. We had had the goat which is aged four months and is best categorized as a firm cheese with a smooth texture and light tang in the finish of the cheese. We have eaten it exclusively as an eating cheese but have been with surprised at the delicate but complex taste. We felt is was better with a lighter wine or a white. Highly recommended!
