these are japanese fresh filled cream puff place,
I've been to beard papa's - all 3 locations - many times, and been to 5 times since choux factory opened.
I think most people on this board have tried beard papa's, so I don't have to write about it.may be I should say that all 3 locations taste exactly same.
choux factory is newcomer, non-chain small oparation place.they are not really popular yet, eventhough having been on magazines.no lines, no wait.
IMHO, choux factory's puff/shell is much better than beard papa's.choux factory uses more eggs for the puff , so that it has more flavor and better texure ( not too dry-ish crunchy like beard papa's ). also I think they use better flour.
and the cream part, choux factory's is much much thicker than beard papa's. it's more like fresh cream than custard.there are no vanilla beans in the vanilla cream,taste -wise I like beard papa's vanilla cream - with vanilla beans - better,more complexed flavor.but I also like choux factory's thick, substancial texture too. if you like very light, almost liquid-like beard papa's cream, you may not like choux factory's.
because of much smaller operation, choux factory has more personal touch, you can see that the pastry chef is whisking the cream in the back of the kitchen.
beard papa's is good, but at choux factory, you can feel that people try to make something delicious very hard.I like that.
