After getting a "fast pass", my group and I made do with 3 lunches each. The first was Big Bob's pulled pork. This was my first experience with the "authentic" version of this dish. I gotta say I was a bit disappointed. The pork looked fabulous and I loved the texture - tender and succulent. But the flavor was so mellow. I'm from the caribbean, so I guess my taste buds are used to more fire'n spice. Seemed like the pork needed seasoning. Dont know if that's how its supposed to be? Next we had the texas brisket which was great (from Buesmoke something I believe). But the best was these awesome wet ribs that were the best I'd tasted..tender and smoky. And the sauce was like no other I've had before. It was acidic instead of sweet, and totally complemented the meat's smokiness. Now I see what the southerners are always talking about. I was beginning to wonder after the pulled pork sandwich...
