This is in response to Lucia's request for info. Yes, we stopped at the BBQ guy's "stand" on Route 22, west side of the road, just south of Pawling. He has parked his white van and the large black smoker on the frontage of Pawling Collision.
He is out there Wednesdays through Sundays from 4PM until he sells out of his ribs (sometimes within an hour!) and says he'll continue to be there until Thanksgiving at least.
This was absolutely the best barbecue I have ever had (except for 25 years ago at a hole-in-the-wall in Arkansas). We were still eating our rack two days later. A rack of ribs with three side dishes will set you back $20. We also ordered two pulled pork sandwiches which were $6 apiece. The meat had the qualities of both tenderness and chew. The true smokey flavor was really astounding. He smokes them over hickory wood. The sauce he makes to accompany them is not necessary because in and of themselves they are so tasty but it does make a nice contrast and carries some heat. It is made from carmelized onions, apricot, Chinese black vinegar and peppers. Of the sides, the best were the beans which had plenty of flavorful shards of meat in them. The cole-slaw was pretty ordinary.
Really good! We were still talking about it two days later, trying to figure out if we could get away with serving it at Thanksgiving Dinner. By the way, my fiance thinks he heard the guy say he would be smoking turkeys too for the holiday. Hmmmm??!
