Any bars out there that take cocktails seriously?

No, I'm not hunting for a place that has a page long "Martini list". No, I'm not hunting for a place that can make all the promotional recipes that come with the trendy flavored vodkas.

What I am looking for is a bar that takes old-fashioned cocktails seriously. Somewhere that the bartender is not likely to look at me funny if I order a Negroni or an Aviation. A place that has a bottle of maraschino behind the bar. Somewhere that squeezes real citrus rather than rehydrating powdered "sour mix". Somewhere that knows that Rose's Lime Juice belongs in a Gimlet and nowhere else.

Does the greater Philadelphia area have any bars that might meet at least half of my criteria? We've got great beer bars, and that makes me quite happy... but I'd like to think that my kitchen is not the most sophisticatd cocktail bar in southeastern PA. Somebody please help prove that hypothesis.
