Baltimore: Viccino's Bistro declining?

In the several years since Viccino's opened its Bistro, the food has mostly been really good and occasionally mediocre. A few months ago we had a great dinner there, but this weekend it seems to be in decline. The calamari itself was well prepared, crisp and good, but the dipping sauce was thin, watery, and lacking much flavor. In the past I have enjoyed the grilled Romaine salad; this time it came barely warmed, almost no dressing (about 6 drops of balsamic vinegar by count) and not really grilled at all. Another guest had escalopes of veal over a risotto. Both were very bland, and the flouring on the veal was pasty. Even liberal salting did not bring out much flavor. Non-food quibble: when I am wearing nice attire, and paying north of $40 a person at a white tablecloth restaurant, I don't appreciate being addressed by the staff as "you guys." What ever happened to "sir" or "gentlemen"? Alas, this is not the only "nice" restaurant to lose its manners.
