i'm running out of places to try spare ribs, so i thought i'd broaden my horizons.
in your opinion, what are the top 5 restaurants that serve baby back ribs?
this is what i'm looking for:
they must be smoked (not too much, not too little)
they must have a smoke ring
they must have a bark, and it cannot be burnt
they must be succulent and tender (not too difficult, considering)
they should be meaty and fairly well trimmed of fat
they should have a flavorful bark that is moderately spicy and not very sweet
they should not be finished on a grill
