Babbo - Wow

My great GF took me to Babbo for my birthday last week and what an experience it was! Rather than opt for their tasting menu we decided to create our own and have each dish paired with a wine recommended by the sommelier. Our courses were as follows (I think I paired the right wine with the right food):

Appetizers:

Wine - "Balbium" 2003, Terre di Balbia
Lamb Tongue Vinagerette
Buffalo Mozzarella Special
Wine - Kerner 2004, Valle Isarco

Pasta:

Beef Cheek Raviloi
Wine - Soave Classico 2004, Coffele
Black Spaghetti
Wine - Collio Bianco Dario Raccaro 2004
Gnocchi with Oxtail

Main:

Wine - Cabrnet Sauvignon 1998, Isole & Olena
Grilled Guinea Hen

Dessert:

Wine - Prosecco di Vladobbiadene N.V., Drusian
Saffron Pana Cotta
Choclate Hazzelnut Cake

Each dish was absolutley amazing, the stand outs for me were the lamb tounge, black spaghetti and the grilled hen; the wine was paired perfectly to each dish and really brought out the flavor intended. I can not give Babbo enough praise. We were blessed with having a fantastic waiter; the guy with short grey/ silver hair kind of spikey in turquoise glasses, wearing a suit (forgot his name). My gf and I both had a wonderful experience; to be honest one of the best I've ever had!
