After trying to make good nut butter (almond, peanut, and hazelnut) in my Vita Mix blender as well as my Champion Juicer, I'm still not thrilled with the results, which tend to be dry, uneven and slightly chunky. Cashew butter, however, seems to come out great. I've seen and read about people making smooth nut butters from high-powered 20 amp Blend Tech blenders, but I don't want to completely rewire the fuse box for my whole house just to make nut butter. I remember working at a natural food manufacturing company about 25 years ago where we made hazelnut butter in an old Japanese electric rice grinder (like a meat grinder, except it had a large wheel gear with a rubber pulley on the back ), for making a product called mochi. When we used it for hazelnut butter it always came out quite smooth.
That got me thinking. I've seen peanut butter making machines sold from specialty equipment dealers, but they are really expensive. These machines seem to be essentially nothing more than suped up meat grinders though. Maybe if I just got a powerful meat grinder, nut butters would come out smooth.
Has anyone tried making nut butter in a meat grinder? Or can anyone suggest a better appliance?
