As discussed, I sent my comments (based on my below review) in the form of an email letter to Ambiente. I polished them a bit, so as to be more concise and less narrative, but otherwise I shared all feedback that was reported below.
I am pleased to report that I received a voicemail message from the chef/owner today, not 12 hours after I sent the letter. While I still have to return his call, I can say that he sounded genuinely concerned, and he indicated that he would address the issues immediately. He also added that our experience did not reflect how they would like to do business, and he invited me to return the call so that we may discuss in further detail.
I am impressed that the chef/owner took my feedback seriously, and that he acted so quickly. Hopefully, this means that our experience will not be repeated. While I don't anticipate rushing back soon, I do feel that if the chef/owner is as devoted to Ambiente's success as it seems (based on his reaction), they will work out the issues. I certainly hope so, it is a lovely space, and it would be nice to have another reliable fine-dining option in Ottawa.
