Need additional input for Austin itinerary

I've gotten plenty of exceptional advice from this board and I'm starting to run low on ideas, so I could use some help. Been in town all week long and have had a ton of amazing food. So far, have done Tacos El Rico, Uchiko (happy hour, twice), Odd Duck, Gourdough's, Lucky J's, Bananarchy, Frank, and beers at the Saucer, Draughthouse as well as happy hours at Peche and the Driskill.

East Side Showroom's trucks, East Side King (Grackle) and Franklin BBQ are in the pipeline, but I still need a few more ideas to round out my trip as I plan to stay until sunday. Are there any other noteworthy trucks that I've missed? Particularly interested in avoiding lines, so would really like to hear ones that haven't really caught much attention sort of like Not Your Mama's (which I really regret not visiting while here for SXSW). Shooting for food trucks or restaurants (preferably ethnic) doing high quality food at low-mid end pricing. Not interested in dressy/fine dining at all. Have a car, willing to drive wherever and there are no dietary restrictions.
