46 hour layover in LA - comments please

I’ve elected to switch my 15-hour layover, followed by a red-eye (travelling on points) to give us Fri 11am to Sunday 9am layover. This gives us time to explore (we’ll have a car) and have a couple (at least) of great meals. I anticipate one ‘blow out’ and one ‘great ethnic’ for the evenings (supplemented by In ‘N Out Burger etc).
For Friday I am thinking Spago (tasting menu) – had it before and loved it so am looking forward to returning.
For Saturday, potentially Guelaguetza (also once before, but for lunch). If this, then is any specific location worth travelling to?
My home base is Toronto so we have multi-ethnic cuisines here – but Mexican is notably absent (in quality terms). And I’ve visited LA 8-10 times over the last 15 years so have sampled many of the top places.
And I’ve reviewed the various ‘best of’ lists (from Mr Grub and others).
If I’ve missed something ‘recent’ please let me know – I’m prepared to switch either (or both).
