Need 4 SF Recommendations: July 4, Late night dining, dim sum, bfast

We will be arriving in San Fran July 3 from Nashville for a two night stay before heading over to Napa for the rest of the week. I've been planning Napa for months and have all our dining squared away there, but need help with San Fran.

1) We'll be arriving LATE on Saturday night - flight doesn't even arrive until 9:40. I imagine we will be tired and hungry. Any thoughts on a casual late night dining stop near Nob Hill (that's where we're staying).

2) We're looking forward to Dim Sum, preferably right in Chinatown. I've read several posts on options. We're not very experienced Dim Sum diners, but we're pretty adventurous eaters. Was thinking Yank Sing or Gold Mountain? Anywhere else we should be thinking?

3) NEXT - dinner July 4th. Ideally we'd have a view of the fireworks or easy access to step outside and see the show after dinner. Otherwise, we're pretty open. Would like something characteristic of the area. We really enjoy a great prix fixe with wine pairings which is hard to find in TN.

4) FINALLY - breakfast on July 5th. Was thinking CHOW, but up for thoughts here as well. Would like to stay close to our hotel.
