36 hours in Vegas...suggestions/critiques of our itinerary please?

My boyfriend and I will be in Vegas the last week of September for the front end of a long weekend trip out west. We will be arriving on Wednesday (early evening) and will be staying at Mandalay, and will be leaving on Friday afternoon. This leaves us with 2 dinners, lunch on Thursday, and brunch on Friday (breakfast Thursday will be grab and go, as he heads to the casino and I head to the pool). As far as our budget goes for dinners, we would like to do something fairly upscale, but not to the point of Robuchon or Guy Savoy. We had originally planned on e by Jose Andres, but decided that this would not be within our budget. Here are my thoughts for each meal:

Dinner options:
L'Atelier
Jaleo
Sage
Bouchon
Charlie Palmer (or StripSteak, which was his suggestion)

As far as lunch on Thursday, we were thinking Fleur since it is in our hotel, but I am open to suggestions....reviews I looked at on CH were not overwhelmingly positive.

We were thinking the buffet at Paris on Friday, which he likes...I've only ever been to brunch at the Wynn, but I've seen good things on CH about Wicked Spoon at the Cosmopolitan.

Any suggestions would be appreciated!
