I just read this evening we have a major insect invasion coming in May: the emergence of the 17-year Cicadas!
Yes Moderators, I realize this is not just Chicago centric but rather one for the general board, which this post links to!
Nonetheless, I expect somewhere out there are local bug experts who will want to weigh in on the culinary aspects of cicadas and other related delicacies.
I recall having lunch with ReneG and RST where the restaurant apologized for not having toasted grasshoppers available. We certainly have people here who eat at a higher level than the rest of us. Of course, it was Richard who obtained the ant eggs we enjoyed recently.
