It's hard to have eat falafel without adding a classic tzatziki sauce to it. I mean, it's good and all, but adding this easy sauce is such the perfect counterbalance of textures and flavor. The yogurt dip and spread often used for Greek dishes is made with grated English cucumber, mint, cilantro, lemon juice, garlic, and cumin. Once you grate the cucumber, you roughly chop it and then mush it into a ball in the center of a kitchen towel, squeezing out all the water. There's a lot of that in cucumber.
