Once the turkey is completely submerged, remove the hook. Fry the turkey for about three minutes per pound or until it is dark brown, the juices run clear, and a thermometer inserted into the inner part of the thigh reads 155°F. During testing, our 17-pound turkeys took 40 to 45 minutes.
