Italian sausage (salsicce, sweet italian sausage, hot italian sausage)
This fresh pork sausage often added to pasta sauces is 70 percent lean meat and 30 percent fat. Sweet Italian sausage is flavored with garlic and fennel seed. Hot Italian sausage also contains crushed chile peppers. It’s sold either as links or in bulk and must be cooked thoroughly before serving. Store refrigerated for 1 to 2 days, or freeze.
