3. Trim the artichokes by first pulling off any damaged or brown leaves from the outside. Next, using the serrated knife, cut the stems, leaving about half an inch, then slice off the pointy top third of the artichokes. (They should fit, stem end up, in your steamer basket with the lid on.) Rub the cut stems and tops with the reserved lemon halves to keep the artichokes from discoloring.
