Farm-to-Table Dining, in the Middle of the Ocean

Gourmet this month tells a story deliberately (and ingeniously) designed to create primal envy in the heart of any true fan of organic food. It’s a profile of Lummi Island, a tiny pip of land off the coast of Washington state where Riley Starks and Judy Olsen set up Nettles Farm.

The beauty of the piece is how it walks readers through the creation of the farm from the clearing of five acres of stinging nettles, to the initial purchase of chickens in order to create organic eggs for homemade pasta, to fishing for salmon that provides much of the food served at the Willows, the island’s inn.

And while we can’t all just set out, conquer several acres of land, and create a thriving, ecologically sound farm-and-inn duo, Gourmet certainly does a nice job of hyping the dream.
