anyone have a delicious tried and true Kasha Varnishkes recipe?

I made a kasha pilaf for the first time this week - and while I do enjoy the taste....the smell I'm not so fond of. Is that just the kasha thing? Or are their tips/tricks to try and cut the odor?
I am making kasha varnishes for friends who have never had Jewish food and who are vegan. What can I make to go with the kasha since chicken/beef isn't an option?
