A common spatula mistake that makes scrambled eggs a messy nightmare is using metal tools. Instead, you should use flexible tools, like non-stick or silicone spatulas.
When you use a fork and aluminum spatula to make scrambled eggs, the soft, fragile proteins in the eggs stick to the tools, often making for sloppy, uneven scrambles.
However, non-stick or silicone spatulas can gently push and fold eggs around a pan without disrupting the cooking process, as liquids slide off of them effortlessly.
With all that said, it is okay to use metal pans. Note that there's always the risk of the eggs sticking, so non-stick pans are the ideal choice to avoid a messy scramble.
