Your Medicine Cabinet Might Be The Key To A Smoother Cheese Sauce

You can make a smooth cheese sauce without sacrificing any flavor by combining your favorite non-processed cheeses with a dash of sodium citrate.
Finding sodium citrate at grocery stores can be hard, but if you've got a bottle of Alka-Seltzer Gold in your medicine cabinet, you already have some.
This only works with aspirin-free Alka-Seltzer, (Alka-Seltzer Gold). Alka-Seltzer Original contains aspirin, and could pose health risks to people with blood clotting issues.
When you add Alka-Seltzer to water, it starts fizzing, and when it's done, you're left with a byproduct: good old sodium citrate.
Once the fizzing subsides, warm the water, and whisk in the shredded cheese. You can tweak the thickness to your liking by adding more cheese or more water as needed.
