You Want To Grill Steaks At A Higher Temperature Than You Think

Instead of grilling your steak over medium heat, you want to cook it over high heat, at least 450 degrees Fahrenheit. This will create a beautiful, even sear.
The Maillard reaction starts at about 300 degrees F. However, temperatures between 450 and 500 degrees F brings out the steak's nuance and caramelizes the exterior.
Before you grill the steak, check the temperature of the grates and adjust it as needed. The most reliable way to do so is a device like the Etekcity infrared thermometer.
