You Steak Is In Need Of Blue Cheese Compound Butter

To give your steak a complementary, rich, deep flavor, build a flavored compound butter (butter mixed with other ingredients — often herbs and seasonings) using fresh blue cheese.
The sour tang of blue cheese cuts through steak's fatty richness to create a decadent pairing. When used moderately, the cheese’s creamy sharpness works well with the beef's char.
To make the compound butter, start by softening the butter so that the other ingredients can be adequately distributed. Mix the butter with crumbled blue cheese using a 1:1 ratio.
Beat the mixture until it's smooth and well-melded, form it into a log, and refrigerate it until firm. Slice the compound butter and add some to the top of your steak as it rests.
By the time it’s ready to eat, the butter will have fully melted. The salt in both the cheese and the butter will also build on the layer of salt added to the steak before cooking.
