To make a Rotel dip, a cheesy dip that’s essentially a spin on Mexican chile con queso, you’ll need some Rotel (canned diced tomatoes and green chilies), Velveeta, and ground beef.
Simply brown the meat in a pan, drain it, add a can of Rotel and some Velveeta, and stir on medium heat until the cheese is fully melted. You can also add milk to thin the dip out.
The mild version of Rotel packs some zest, but you’ll need a can of hot Rotel (made with habaneros instead of green chilies) for a spicier dip. You can also add some chili powder.
Rotel dip is commonly served with tortilla chips, but it goes well with crackers and veggies, too. You can also use the chip dip as a sauce for your tacos and baked potatoes.
