You Need One Basic Marinade Ingredient For The Juiciest Chicken Ever

Baking soda is a game changer when it comes to tenderizing chicken. As a marinade ingredient, baking soda allows you to cook the juiciest chicken breast you've ever eaten.
Chicken contains a lot of protein and has a low pH, as meats are acidic. Meanwhile, baking soda has a high pH, meaning it's an alkaline substance that neutralizes acids.
Baking soda therefore raises the pH level on the surface of chicken, making it harder for the proteins in the chicken to bond together and causing the meat to soften.
Simply add half a teaspoon of baking soda to the marinade, allow the chicken to soak in it for no more than 30 minutes at room temperature,
and then begin cooking.
