When trying to please a group of guests, there's a lot to be said for making quiche using individual muffin tins, which allows for endless and easy customization.
Muffin tin quiches work with or without crusts. If you go with a crust, roll it out after chilling for at least two hours, and use a 2 ½ or 3-inch round cutter to cut the quiches.
Lightly coat the tin in nonstick spray and firmly press the crust into each muffin well. For 24 quiches, lightly beat 12 eggs, one cup of milk, and a ¼ teaspoon of salt and pepper.
Add a tablespoon of your filling to the crust in your muffin tins. Finally, pour in your egg mixture and bake at 375 degrees F for about half an hour.
