Why Your Scrambled Eggs Are In Need Of Baking Powder

It can be hard to cook scrambled eggs with a fluffy, cloud-like texture. Fortunately, there's one ingredient that makes fluffy eggs easier to make: baking powder.
Baking powder is a chemical leavening agent that creates carbon dioxide bubbles, adding extra air to your eggs. It creates two separate reactions for extra fluffiness.
Wait to put it in until you're almost done whisking your eggs. Then, add the baking powder, whisk to combine, and let it sit for a
minute before adding it to the pan.
Baking powder has a naturally bitter flavor, but you can typically use it in such small amounts that the taste isn't noticeable. Only add about 1/16 teaspoon for every two eggs.
Done right, this method should result in a fluffy texture without any baking powder taste. However, since baking powder is full of sodium, don't
add much salt on top of it.
