The cut comes from a cow's bottom sirloin area, known as the sirloin butt. It can be labeled in various ways, so watch for terms like bavette steak, sirloin tips, or tip steak.
Since this cut isn't as tender as a filet and doesn't have the marbled fat of a ribeye, it's best to cut it against the grain and into cubes, then marinate it for easier eating.
