Steak bites, also known as steak tips or beef tips, are a generally more affordable steak dinner, which come from a less expensive cut of steak — most often the sirloin flap meat.
The cut comes from a cow's bottom sirloin area, known as the sirloin butt. It can be labeled in various ways, so watch for terms like bavette steak, sirloin tips, or tip steak.
Since this cut isn't as tender as a filet and doesn't have the marbled fat of a ribeye, it's best to cut it against the grain and into cubes, then marinate it for easier eating.
