Many have worked to suss out the brands behind Costco’s Kirkland Signature items, including the Aged Parmigiano Reggiano that comes in slices or a mammoth 72-pound wheel.
Not any Parmesan can call itself Parmigiano Reggiano; the title is reserved for cheeses sourced from a specific region of Italy and aged for 18 months to 3 years.
Since the cheese is authentic Parmigiano Reggiano, it must come from Italy, as it is protected by DOP rules. With this, we can determine the brand behind it is Formaggi Zanetti.
The Italian brand has been operating for over a century and distributes cheeses from several regions in Italy, using large scale production methods without sacrificing quality.
The Kirkland Signature wedge has the Kirkland label on the front and a Zanetti label on the back. However, other Kirkland Parmesan products are made by other companies.
