What Are Latkes?

A cross between potato pancakes and fritters, latkes are essentially a combination of shredded potatoes and onions held together with eggs and flour.
This creates a lumpy batter that is then fried in oil to create a crisp, golden exterior. A traditional Hanukkah food, latkes are now enjoyed by many people all year round.

Basic Ingredients

Almost all latkes contain a few basic ingredients: potatoes (typically russets), onions, eggs, salt, and flour or matzo meal, plus oil for cooking.
The majority of latke recipes simply call for vegetable oil of some kind. Eggs and dry ingredients, such as flour, matzo meal, or breadcrumbs, bind the mixture.

Basic Preparation

To make latkes, grate the potatoes and onion, mix in the egg, flour, and seasonings, and fry in hot oil. Ensure your potatoes are well-drained and the oil is hot.
You also must use the right cookware, fry them for long enough, and drain them appropriately when done. Fry them by placing big spoonfuls in the pan, then lightly mash them down.
