If you have some leftover sweet potatoes in your fridge, consider turning them into some delicious pancakes with this amazing sweet potato pancakes recipe.
Create a foundation for the batter with 1 ½ cups of sweet potatoes and 1 cup of all-purpose flour. Then, instead of buttermilk, use a mix of ½ cup of sour cream and ¾ cup of milk.
A large egg, a few tablespoons of butter, ½ teaspoon of baking soda, ¾ teaspoon of baking powder, and ¼ teaspoon of salt provide binders, the oils, and the leavening agents.
Next, add 1 ½ tablespoons of maple syrup , a dash of nutmeg, and cinnamon to infuse your short stack with sweetness. Mix wet ingredients before mixing dry ingredients separately.
