The Tender Difference Between New York Strip And Ribeye Steak

New York strip and ribeye are both high-quality, tender cuts, but the main difference is its fat content, with ribeye having more marbling (fat strips) running through it.
Both cuts come from similar areas of the cow's back; The ribeye is from the ribs, while the New York strip
is from the next section
back called the short loin.
The higher proportion of marbling makes ribeye a bit fattier and more tender than the New York strip, which often has a large strip of fat along the side that usually isn't eaten.
The higher fat content keeps the ribeye juicier even when it’s a bit overcooked, whereas the lower fat content makes the New York strip slightly chewier even while it’s tender.
