The Steak Cut That Doubles As An Affordable Filet Mignon Alternative

At over $30 per pound, filet mignon is arguably the most expensive steak cut out there. However, if you're running short on budget, you can try the shoulder petite tender.
Often sold as chuck shoulder tender, shoulder tender medallions, or just shoulder tender, this cut of meat, coming from a cow's shoulder muscle, can be as
cheap as $14 per pound.
The muscle, called teres major, is perhaps the next most tender cut after filet mignon and tenderloin steak. This is because teres major is a muscle that cows rarely use.
On top of that tenderness, this cut also offers a distinctly beefy flavor. It's a lean cut that's relatively low in fat, a characteristic that it
shares with filet mignon.
