Sealing food in airtight containers helps prevent freezer burn, but the cold air isn't the only problem. It's also crucial to keep moisture from escaping out of the packaging.
This is because freezer burn is the process by which food becomes dehydrated after it's exposed to the cold, dry air of the freezer. If the moisture escapes, ice crystals can form.
Prevent the moisture from getting sucked out of your food and its packaging by keeping the cold air from coming into contact with it or preventing moisture from leaving it.
To do this, choose storage containers that don't allow moisture to escape, such as those made of glass. Another popular option is freezer bags that zip shut or vacuum seal bags.
If you use bags, be sure to get as much air out as you can before sealing them, and make sure the bag is securely sealed all the way to the edge to lock the moisture in.
