To achieve a perfectly crispy flank steak, try broiling it in the oven instead of searing it on the stovetop or grill. With a few simple steps, your steak will be ready in minutes.
When you grill, you cook food over an open flame and flip it halfway through. Broiling is essentially the same thing, except the direct heat source is on the top — not the bottom.
To start, marinate your steak in a sauce and place it on a sheet pan along with the marinade. If you want to keep the steak as rare as possible, begin by broiling it on high.
Check it after three minutes to ensure the surface has browned, and then flip and cook it for three more minutes. To heat it through entirely, broil it for five minutes per side.
Then, let the steak rest for a few minutes and slice it against or across the grain, not with it. Cutting the meat against the grain will break down some of its harder fibers.
