If you're whipping up potato salad and don't have mayonnaise on hand, or just prefer using a healthier dressing, consider incorporating yogurt into the recipe.

Ideally, you’ll want to use plain Greek yogurt. Since it's strained, Greek yogurt is a lot thicker than other yogurt varieties, so it'll stick to your potato pieces better.

Additionally, its relatively neutral taste will play well with other seasonings you might add to a potato salad dressing, be it lemon, mustard, green onions, or fresh herbs.

Since mayonnaise is fattier than Greek yogurt, mayo recipes will usually stick to around a half-cup of mayo for each pound of potatoes, while yogurt recipes may go higher.

However, if you're using Greek yogurt, just be aware that you're working with a brighter, tangier base, so you may want to start with less and add more as you see fit.
