A hearty bowl of chicken noodle soup can get old after eating it a lot. A simple, perhaps unexpected, solution is to add a little bit of miso paste to the mix.
Bowl of miso paste
Miso is a fermented paste made from soybeans, salt, and koji, a simple yet powerful ingredient packed with umami flavor. Even just a spoonful of the stuff is hyper-concentrated.
Bowls of different-colored miso paste
Adding a hint of miso to chicken soup makes for a truly rich bowl, exposing hidden flavor layers. Most miso variations will work, but lighter miso typically mixes in better.

Miso also brings additional thickness to chicken soup, making it lusher and creamier. Simply add a tablespoon of miso paste to your chicken soup recipe before adding broth.

After adding broth to the pot, stir the mixture well to avoid any unsightly clumps of miso appearing in the final product. Also, make sure to simmer the soup and not to boil it.
