The Secret That Makes Texas Roadhouse Steak Sauce So Flavorful

Texas Roadhouse’s Classic Steak Sauce is something fans swear by, and its deliciously unique taste results from the unusual combination of tamarind extract and raisin paste.
While there are other steak sauces that include either tamarind extract or raisin paste, the combination of both of these ingredients in one sauce is relatively less common.
Tamarind, which looks somewhat like a vanilla bean pod with a pulpy interior, is a tropical fruit with a sweetly sour flavor. It is what adds sweetness and acidity to the sauce.
Using the intensely concentrated extract ups the tamarind’s profile in the sauce. The sweetness boosts the steak’s savory umami taste, while the acidity balances the other flavors.
On the other hand, raisin paste, which is basically raisins blended into a thick paste, adds natural sweetness and a deeper flavor to the sauce and thus the steak it's paired with.
Raisin paste also gives the sauce a dark color and some stickiness to help it adhere to the steak. In a nutshell, the sauce is for those who love a tangy-sweet taste on their beef.
