One of the best things about grilled cheese is its versatility, as you can add all kinds of fillings. An unexpected yet delicious topping for grilled cheese is pickles.
The primary benefits that pickles bring to your grilled cheese sandwich are salt and crunch. Opt for a thicker cut, which will have more snap
than flimsy, thinner options.
Rather than salty cheddar, pick a mild cheese like Swiss or havarti to better balance the pickles. Also use decently hearty bread, such as a crusty sourdough.
Before adding the pickles, pat them dry; neither the cheese or bread need extra moisture. You can also add other cured fruits and veggies, like pickled onions or green tomatoes.
