Making caramel from scratch often involves a tricky process that requires lots of attention. However, you can make the process easier by simply combining olive oil and maple syrup.

The result is a simple, vegan take on the popular topping, which can be used on desserts like ice cream or cheesecake, or as an ingredient to sweeten salad dressings or marinades.

To make it, add equal parts cold maple syrup and high-quality olive oil to a bowl. Ensure it is 100% pure maple syrup and not table syrup, which has added ingredients.

Add a pinch of salt to the bowl and mix it all together. It may take a while to emulsify, but once it does, you'll be left with a smooth caramel topping.
